Healthy Chicken Marinade Recipe

Healthy chicken marinade for chicken breasts or any cut of chicken. This easy marinade adds flavor as well as tenderizes the chicken.

Ingredients

Servings

Chicken Marinade

  • ½ cup lemon juice fresh
  • 3 tablespoons Worcestershire sauce
  • ¼ cup olive oil
  • 2 tablespoons oregano minced or 2 teaspoons dried oregano, fresh
  • ¼ cup parsley minced and lightly packed or 4 teaspoons dried parsley, fresh
  • ¼ cup basil minced and lightly packed or 4 teaspoons dried basil, fresh
  • 3 cloves garlic minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Chicken

  • 2 pounds chicken skinless breasts or any cut

Instructions

Chicken Marinade

  1. Add all marinade ingredients to a medium bowl and whisk until completely combined.
  2. Add chicken to large resealable bag or other container with a lid.
  3. Pour marinade over chicken, and seal.
  4. Place in refrigerator to chill up to 4 hours. Turn bag half way through marinading to ensure all chicken is coated.
  5. Remove from refrigerator and set at room temperature, 20-30 minutes.

Bake

  1. Preheat oven to 375 degrees.
  2. Set out 13x9 baking dish and lightly coat with olive oil or olive oil cooking spray.
  3. Place chicken in baking dish.
  4. Discard marinade.
  5. Bake for 20-25 minutes or untilinternal temperature reaches 165 degrees F. 
  6. Remove from oven and let chicken rest 5 minutes before slicing.

Slow Cooker

  1. Lightly coat the inside of the slow cooker with olive oil or spray with cooking spray.
  2. Place chicken in a slow cooker.
  3. Discard marinade.
  4. Cover and slow cook on low for 3-4 hours or until the internal temperature reaches 165 degrees F. 
  5. Remove from oven and let chicken rest 5 minutes before slicing.

Grill

  1. Lightly coat the grilling grates with olive oil.
  2. Pre-heat grill to 400 degrees.
  3. Place chicken on the grill.
  4. Discard marinade.
  5. Cook chicken for 4-5 minutes on each side or until the internal temperature reaches 165 degrees F.
  6. Remove from grill and let chicken rest 5 minutes before slicing.

Notes

  • I use 4 chicken breasts that are about 8 ounces each.
