Healthy Chocolate Chip Cookie Granola

Best ever crispy homemade granola. Made with simple and clean ingredients, this nutritious, no oil granola is the ideal breakfast, healthy snack, or late night treat. Tastes like a chocoalte chip cookie and perfect for meal prep.

Ingredients

  • 2 cups rolled oats
  • ½ cup coconut shredded
  • cup pecans chopped
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • cup maple syrup or honey
  • ¼ cup almond butter
  • 2 teaspoon vanilla extract
  • cup mini chocolate chips

Instructions

  1. Preheat oven to 325F. Line baking sheet with parchment paper.
  2. In a large bowl, combine oats, shredded coconut, pecans, cinnamon, and salt.
  3. In a smaller bowl, combine maple syrup, almond butter, and vanilla extract. Microwave for 20 seconds and pour over dry ingredients. Stir until all oats are completely coated.
  4. Next spread the granola on the lined baking sheet in an even layer and press down using a spatula.
  5. Baked for 18 - 22 minutes, until golden brown. Stir granola halfway through and make sure to press down into a flat layer again after mixing. Granola will further crisp up as it cools.
  6. Let cool for at least 20 – 25 minutes before breaking apart. Add in mini chocolate chips.
  7. Store in an airtight container for 7 - 14 days.

Notes

  • Can substitute pecans for walnuts, almonds, or any nut.
  • Can substitute almond butter for peanut butter, cashew butter, or sun butter. However, this will change the taste.
  • Can use honey instead of maple syrup.
