Healthy Chocolate Chip Muffins

These Healthy Chocolate Chip Muffins combine ripe bananas, applesauce, and cocoa for a moist, tender crumb with the sweet crunch of semi-sweet chocolate chips. Oats ground finer add body and texture without weighing down the batter. Baking soda and powder work together to achieve a good rise. They bake into two dozen standard-size muffins that balance fruitiness with a mild chocolate flavor.

Description

Healthy Chocolate Chip Muffins use a batter made from mashed ripe bananas and applesauce, adding natural sweetness and moisture. Cocoa powder and a combination of baking soda and baking powder provide structure and lightness, while rolled oats processed into finer pieces enrich the texture. Flour forms the base, and semi-sweet chocolate chips deliver pockets of melty chocolate throughout. The muffins are portioned into lined or greased standard muffin tins and baked at 350°F for about 20 to 25 minutes, until a toothpick comes out clean. A short cooling period allows them to set before enjoying or storing.

The use of bananas and applesauce reduces added fat, while oats contribute some whole grain character. These muffins provide a balance of flavors and textures with soft crumb, gentle chocolate bitterness, and sweetness from sugar and fruit.

They are suitable as a snack or breakfast treat and can be refrigerated or frozen to extend freshness.

Ingredients

Servings
  • 5 banana very ripe
  • 1 cup applesauce
  • 2 egg
  • 1 ¾ cups sugar
  • ½ cup cocoa powder
  • 2 teaspoons baking soda
  • ½ teaspoon baking powder
  • 1 ¼ cups rolled oats
  • 2 cups flour
  • 12 ounces semi-sweet chocolate chips or dark chocolate chips

Instructions

  1. Preheat oven to 350℉. In a large mixing bowl combine the bananas, applesauce, eggs, and sugar with a hand mixer until the bananas are blended in well.
  2. Mix in the cocoa, baking powder, and baking soda.
  3. Measure the oats into a blender or food processor and pulse a few times until the oats become finer pieces.
  4. Add the blended oats and flour to the mix and blend until everything is thoroughly mixed. Then stir in the chocolate chips (I like to reserve about 1/2 cup to sprinkle on the top of each muffin just before baking).
  5. Use a 1/4 up measuring cup and measure it (slightly heaping) into regular-size muffin tins that have been lined with cooking spray or baking liners. This makes 2 dozen muffins.
  6. Bake for 20 to 25 minutes, they are ready when a toothpick in the center comes out without batter.
  7. Cool for 5 to 10 minutes before removing from the baking tin, then cool completely on the counter or a cooling rack. They can be refrigerated or frozen to last longer.
