  • 1 cup pumpkin puree Libby’s has the best orange color!, 240g
  • 1/4 cup applesauce or mashed banana, unsweetened
  • 1/4 cup maple syrup pure, 60g
  • 1/4 cup coconut oil melted, 60g
  • 2 egg large
  • 1 tsp vanilla extract
  • 2 cups oat flour 240g
  • 1 Tbsp pumpkin pie spice
  • 1.5 tsp baking powder
  • 1/2 tsp salt each
  • 1/2 tsp baking soda each
  • 1/3 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Grease a muffin pan with cooking oil and/or line with liners.
  2. In a large bowl, mix together the pumpkin, applesauce, maple syrup, coconut oil, eggs and vanilla.
  3. In a small bowl, whisk together the flour, pumpkin pie spice, baking powder, salt and baking soda.
  4. Add the dry ingredients and chocolate chips to the wet ingredients. Fold just until the dry ingredients are incorporated and you see no more streaks of flour.
  5. Scoop batter into the greased muffin pan. Sprinkle a few extra chocolate chips on top if desired (so they’re pretty!)
  6. Bake for 20-22 minutes, or until a toothpick inserted comes out mostly clean. Let cool for 10 minutes then enjoy!
