Healthy Corn Chowder

This Summer Corn Chowder is easy to make, delicious, and full of flavor! Made with fresh corn, potatoes, and other simple pantry staple ingredients.

Ingredients

  • 8 Ears corn yellow, fresh, kernels cut from cob
  • 2 tablespoons butter Or Olive Oil, or ghee
  • 3 shallot chopped
  • 1 bell pepper diced, yellow or orange
  • 1 1/2 tablespoons gluten-free flour
  • 2 garlic Minced, cloves
  • 5 Cups water or vegetable stock
  • 1 pound potato cut into 1/2-inch pieces, yellow
  • 1 teaspoon thyme fresh
  • 1 bay leaf
  • 1/2 teaspoon turmeric powder
  • 2-3 Tbsp chives chopped fresh
  • salt freshly ground, to your taste
  • black pepper freshly ground, to your taste

Instructions

  1. Melt 2 tablespoons Butter/Ghee in a large pot over medium heat. Add the 3 Shallots (chopped) and 1 yellow or orange bell pepper (diced), and cook, stirring frequently, until onion has softened, about 6-8 minutes.
  2. Add in the 1 1/2 tablespoons Gluten-Free Flour, 1 teaspoon Fresh Thyme, and 2 Garlic Cloves (minced), and cook for 1 1/2 minutes. Add in the 5 Cups Water or Vegetable Stock.
  3. Bring to a boil, then stir in 8 Ears Fresh sweet yellow corn, kernels cut from cob, 1 pound Yellow Potatoes, 1/2 teaspoon Turmeric powder, and 1 Bay Leaf.
  4. Reduce heat to medium-low and simmer, stirring occasionally, until potatoes are tender, about 20 minutes. Taste and adjust Salt and freshly ground black pepper, to your taste.
  5. Remove the bay leaf then transfer half of the chowder to a blender. Blend until smooth, then stir the mixture back into the pot.
  6. Serve in bowls, garnish with more corn, and 2-3 Tbsp Chopped fresh chives, and enjoy!

Notes

  •  
  • Feel free to add some cooked bacon bits as garnish if you like. Or you can even use some shredded Chicken
  • Use a waxy potato, like Yukon Gold or red potatoes.
  • You don't have to peel the potatoes.
  • If your corn is not as sweet as you'd like, add a dash of honey to the chowder.
  • If your corn is super sweet, you can add a little more salt to balance the sweetness.
  • Add in some sliced jalapenos for a spicy kick!
  • Top with some cheddar cheese for a lovely, cheesy twist.
