Healthy Cranberry Sauce
Description
Healthy Cranberry Sauce combines 12 ounces of fresh cranberries with maple syrup and orange juice, simmered until the berries burst and the sauce thickens to a textured consistency. An optional touch of vanilla extract and fresh orange zest deepens the citrus notes, enhancing the natural tartness of the cranberries while the maple syrup adds subtle sweetness. The cooking process requires gently boiling the mixture, covered and stirred occasionally, to achieve the right thickness within about 15 minutes.
The sauce’s bright red color and fresh flavor make it a versatile accompaniment, suitable for traditional holiday plates or as a flavorful condiment throughout the year. It works well paired with poultry, pork, or even as a spread for breads. This recipe does not specify spices or thickening agents beyond the fruit and sweeteners, resulting in a light, fresh fruit sauce.
Leftover sauce can be refrigerated in an airtight container for one to two weeks or frozen for up to three months. It can be made ahead and chilled before serving. Frozen cranberries may be used, though they require longer cooking to thicken. Maple syrup quantity can be adjusted to taste for more or less sweetness.
Ingredients
- 12 ounces cranberries fresh
- ½ cup maple syrup plus more to taste
- ½ cup orange juice
- ½ teaspoon vanilla extract (optional)
- orange zest from 1
Instructions
- Combine cranberries, maple syrup and orange juice in a saucepan over medium high heat. Bring mixture to a boil, cover and reduce heat to low, stirring occasionally, until the sauce thickens up to your desired consistency and the cranberries have popped. This will take about 10-15 minutes.
- Remove from heat and stir in the vanilla (if using) and orange zest. Taste and add more sweetener if needed.
- Serve immediately or let cool in the fridge until ready to serve.
Notes
- Water can replace orange juice if its flavor is not desired.
- Frozen cranberries are acceptable but will need extra cooking time to thicken.
- Store leftovers in the refrigerator up to 1-2 weeks or freeze up to 3 months in airtight containers.
