Healthy Creme Brulee

This Healthy Creme Brulee offers a lighter take on the classic dessert by using fat-free yogurt sweetened with low-sugar strawberry preserves and turbinado sugar. The creamy yogurt base is topped with a caramelized sugar crust created by torching the raw sugar on top, resulting in a contrast between the cool, tangy yogurt and the crisp, lightly browned sugar layer. Finished with fresh strawberry slices, this version is both refreshing and indulgent without heavy cream.

Description

Healthy Creme Brulee replaces the traditional custard with plain fat-free yogurt combined with low-sugar strawberry preserves, providing a fruity and tart foundation. The preparation involves layering fruit preserves at the bottom of a ramekin followed by sweetened yogurt, then topping it with turbinado sugar which is caramelized with a culinary torch to create the characteristic crisp topping. The torching step is best done just before serving to prevent the sugar from dissolving into the yogurt. Final garnishing with fresh strawberry slices adds both color and a fresh note.

The dessert offers a balance of creamy texture from the yogurt and a crisp caramel topping that cracks when tapped. The use of fruit preserves gives subtle sweetness and berry flavor while avoiding added fats, making it a lighter dessert option. It can be served immediately after torching for best texture and temperature contrast.
