Description
The recipe begins by mixing mashed bananas with honey, vanilla, egg, oil, and Greek yogurt to create a wet base. Whole wheat pastry flour, unsweetened cocoa powder, baking soda, and salt are combined separately and then gently folded into the wet mixture. Half the chocolate chips are mixed in, and the remaining chips top the batter. Muffins are baked until a tester comes out clean, ensuring a soft interior.

Ingredients
- 3 banana medium ripe, mashed
- 1/4 cup honey or pure maple syrup
- 1 teaspoon vanilla extract
- 1 egg large
- 2 tablespoons extra virgin olive oil can sub melted and cooled coconut oil, avocado oil or butter
- 1/2 cup Greek yogurt plain or vanilla, 2% or whole-milk
- 1 cup whole wheat pastry flour or white whole wheat flour
- 1/2 cup unsweetened cocoa powder or cacao powder, use high quality cocoa powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1/2 cup chocolate chips plus 2 tablespoons for sprinkling on top
Instructions
- Preheat oven to 350 degrees F. Line a 12 cup muffin tin with muffin liners and spray with nonstick cooking spray.
- In a large bowl add the mashed bananas, honey, vanilla, egg, oil and greek yogurt. Whisk wet ingredients together until well combined.
- Add dry ingredients to wet ingredients: whole wheat pastry flour, cocoa powder, baking soda and salt. Mix until combined. Stir in 1/2 cup of chocolate chips.
- Pour batter into greased muffin cups. Sprinkle the remaining 2 tablespoons of chocolate chips on top of muffins. Bake for 23-27 minutes until the tester comes out clean.
Notes
- For best texture, use whole wheat pastry flour or white whole wheat flour rather than regular whole wheat flour.
- You may substitute the sweetener with either honey or pure maple syrup according to preference.
