Healthy French Onion Dip with Caramelized Onions and Chives

Ingredients

  • 4 yellow onion thinly sliced, small, 600g
  • 1 Tbsp olive oil 15g
  • 1 oz. cream cheese reduced-fat, block
  • 1 cup Greek yogurt or sour cream, plain, 2%, 226g
  • 1/4 cup mayonnaise light, (60g
  • 2 Tbsp chives freshly chopped
  • 1 tsp sugar
  • 1 tsp soy sauce low-sodium
  • 1/2 tsp onion powder
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • potato chips for serving, crinkle cut

Instructions

  1. Set a large skillet to medium heat and add the olive oil. When shiny, add the onions and 1/2 tsp of salt. Saute for 5 minutes, stirring occasionally. Then reduce heat to low, add 1-2 tablespoons of water and cook for 30-35 minutes, continuing to stir occasionally until onions are golden brown. If your onions start to stick to the pan, add another splash of water.
  2. Once onions are caramelized, transfer them to a medium sized bowl and allow them to cool completely.
  3. Place the cream cheese, yogurt and mayo in a separate bowl and mix until smooth (use the microwave and heat in 10 sec bursts if needed to assist). Then mix in the remaining ingredients.
  4. Finally, mix in the cooled caramelized onions. Cover with plastic wrap and refrigerate for at least an hour to allow the flavors to develop. Even better, let it sit overnight!
  5. Garnish with chopped chives and freshly cracked black pepper. Serve with crinkle cut potato chips and enjoy!

  • To make gluten-free: use gluten-free soy sauce, coconut aminos, Worcestershire sauce, or balsamic vinegar.
  • To make dairy-free: use dairy-free cream cheese, dairy-free Greek yogurt and vegan mayo (if desired).
