Healthy French Toast Casserole with Berries
Description
The Healthy French Toast Casserole with Berries uses cubed bread coated in a mixture of eggs, egg whites, almond milk, cinnamon, stevia, vanilla, maple syrup, and vanilla protein powder, which adds nutritional value. Fresh diced strawberries and blueberries are folded in to distribute fruit evenly throughout. Baking yields a toasted texture on the outside while keeping a soft interior cushioned by the moist custard.
The dish is finished with a topping made from vanilla Greek yogurt, powdered sugar, almond milk, and almond extract, blended to a thin frosting consistency that is drizzled over the casserole while warm, allowing it to soak through. The combination of tangy yogurt and fruity sweetness complements the spiced base in this casserole.
This casserole serves as a nutrient-boosted breakfast or brunch, combining protein, fiber-rich berries, and moderate sweetness. The berry distribution in every bite ensures balanced flavor. It's versatile to enjoy warm with additional toppings like whipped cream or extra fruit.
Notes advise applying a generous spray to the baking dish to prevent sticking due to protein powder. Dicing berries finely and letting the frosting seep in after baking enhances the texture and flavor experience.
Ingredients
For the casserole
- 1 loaf bread Arnold-Keto
- 1 ¼ cup strawberry diced, fresh
- ½ cup blueberries
- 1 egg
- ½ cup egg white
- 1 tsp ground cinnamon
- 1 cup almond milk unsweetened, vanilla
- 1 tsp stevia liquid form
- 1 tsp vanilla extract
- ¼ cup pure maple syrup
- 1 coop protein powder iHeartMacros, vanilla
For the frosting
- 150 grams vanilla Greek yogurt 1 single serve cup, Two Good brand
- ¼ cup powdered sugar
- ½ cup almond milk unsweetened, vanilla
- ½ tsp almond extract
Instructions
- Preheat the oven to 350°F. Generously coat a 9x13 baking dish with cooking spray.
- Use a serrated edge knife to cut each piece of bread into 9 squares (3 rows & 3 columns).
- Then, in a large mixing bowl whisk together: egg, egg whites, cinnamon, almond milk, stevia, vanilla extract, maple syrup and protein powder. Whisk until the protein powder is completely dissolved.
- Add the cubed bread pieces into the mixing bowl with the wet ingredients and toss around until each piece of bread is well coated. Mix in diced strawberries and blueberries.
- Dump bread and fruit mixture into your greased baking tray doing your best to evenly distribute the fruit pieces.
- Bake for 30 minutes or until fruit has wilted and bread is toasted.
- While the french toast casserole is baking, use a hand mixer to beat together frosting ingredients.
- Then, drizzle it over the baked casserole and let it soak into the bread. I recommend topping with warm berries or cool whip! Enjoy!
Notes
- Spray the baking dish well as protein powder can cause sticking during baking.
- Dice strawberries finely and mix thoroughly to distribute fruit evenly in the casserole.
- The yogurt-based frosting is intentionally runny to allow soaking into the casserole after baking.
- Consider topping with warm berries or whipped cream for serving.
