Healthy Lemon Loaf (Starbucks Copycat)

This Healthy Lemon Loaf combines whole wheat pastry flour, real lemon juice and zest, maple syrup, and Greek yogurt to create a moist, subtly tangy quick bread reminiscent of Starbucks’ lemon loaf. The batter is blended smoothly and baked in a loaf pan, then topped with a fresh lemon glaze made from powdered sugar and lemon juice. The loaf offers a balance of sweet and citrus flavors with a tender crumb that works well for breakfast, snack, or tea time.

Description

The Healthy Lemon Loaf uses whole wheat pastry flour or all-purpose flour as a base for a denser texture with nutritional benefits. Eggs, avocado oil, and Greek yogurt provide moisture and richness, while maple syrup adds natural sweetness. Fresh lemon juice and zest brighten the flavor, making it distinctly lemony without overwhelming sweetness. The batter is mixed combining dry and wet components and baked until a clean toothpick test confirms doneness.

After cooling, the loaf is glazed with a simple mixture of powdered sugar and lemon juice, adding a tangy sweetness and smooth finish. This topping enhances the lemon flavor and provides a nice contrast to the crumb’s moist texture. The recipe notes offer options for flour substitutions, egg alternatives such as flaxseed eggs, and oil swaps, accommodating dietary preferences.

This lemon loaf is suitable for serving sliced with coffee or tea, as a light dessert, or a quick on-the-go treat. It holds well for several days if stored properly and can be adapted to gluten-free or dairy-free versions using suggested ingredient swaps.

Ingredients

Servings
  • 1 ½ cup whole wheat pastry flour or all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 egg
  • ¼ cup avocado oil
  • ¾ cup pure maple syrup or granulated sugar
  • 2 Tablespoons lemon juice fresh
  • ½ Tablespoon lemon zest
  • ¾ cup Greek yogurt full fat

Lemon Glaze

  • ¾ cup powdered sugar
  • 2 Tablespoons lemon juice fresh

Instructions

  1. Preheat oven to 350°F and line a loaf pan with parchment paper or grease with cooking spray.
  2. Combine flour, baking soda, baking powder and salt in a medium mixing bowl. Set aside.
  3. Using a hand mixer whisk eggs, oil, maple syrup, lemon juice, lemon zest and Greek yogurt in a large mixing bowl until fully combined.
  4. Add dry ingredients to wet ingredients and stir to combine using a wooden spoon or spatula.
  5. Pour batter into prepared loaf pan and bake for 40-45 min until toothpick inserted comes out clean. Let cool for 10-15 minutes before removing from pan. Then transfer to a cooling rack to cool completely.
  6. Once loaf is cool, make glaze by whisking together powdered sugar and lemon juice in a small mixing bowl.
  7. Top loaf with lemon glaze and serve!

Notes

  • If you don’t have whole wheat pastry flour, all-purpose flour can be used as a substitute.
  • Flaxseed eggs might replace eggs but may alter rise and texture.
  • Avocado oil is replaceable with neutral oils like vegetable or canola oil; melted butter can also be used.
  • Dairy-free yogurt can substitute Greek yogurt for a dairy-free version.
  • Glazing after the loaf is fully cooled helps create a nice lemon finish.
