Description
This recipe starts by washing and boiling peeled sweet potatoes until tender. Once drained and slightly cooled, the sweet potatoes are peeled and mashed along with softened cream cheese and milk to achieve a creamy consistency. Salt and pepper are added to taste.
The cream cheese adds richness and moisture while providing a lighter alternative to heavy cream or half and half. Garnishing with fresh thyme brings a subtle herbal note, and optionally drizzling olive oil or melted butter adds flavor and a silky finish.
The texture is smooth yet slightly rustic, with the natural sweetness of the potatoes as the primary flavor. The dish can be adapted with dairy-free or vegan alternatives like almond milk or dairy-free yogurt. A pinch of cinnamon can also be added to enhance the flavor variation.
Ingredients
- 4 pounds sweet potato
- 1/3 cup cream cheese softened, light or fat-free
- salt to taste
- black pepper to taste
- 1/3 cup milk
- thyme or rosemary, to garnish, fresh
- olive oil optional, to garnish, or melted butter; drizzle
Instructions
- Wash the 4 pounds sweet potatoes under cold running water to remove any dirt or contaminants.
- Using a sharp knife, carefully remove any bruised spots. Pat them dry with a paper towel.
- In a large pot of boiling water, add potatoes and a pinch of salt. Let it boil for 12 to 15 minutes until tender.
- Drain and let it sit at room temperature for a few minutes until ready to handle. Meanwhile whisk 1/3 cup cream cheese, Salt & pepper into a bowl.
- Now peel and mash the sweet potato with a potato masher, add 1/3 cup milk, and mash again to your desired consistency.
- Add cream cheese mixture and mix until well combined. Garnish with Fresh thyme and serve. Drizzle of olive oil or melted butter.
Notes
- Use fresh, whole sweet potatoes rather than frozen for the best texture and flavor.
- Cream cheese is preferred over Greek yogurt to provide richness; use light or fat-free cream cheese if desired.
