  • 2 pounds sweet potato peeled and cut into 2" chunks (approximately 4 medium sweet potatoes
  • 2 tablespoons butter
  • 1/2 cup milk low-fat
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon cinnamon
  • 1 tablespoon thyme sprigs, fresh

Instructions

  1. Place sweet potatoes in a large saucepan over high heat and cover generously with boiling water. Bring to a boil then reduce heat to medium, and cook uncovered until the sweet potatoes are fork tender, about 15-20 minutes.
  2. Drain the sweet potatoes, and return to saucepan. Add the milk, butter, salt, pepper and cinnamon; mash with a potato masher to desired consistency.
  3. Serve warm and garnish with thyme leaves.
