Healthy Meatloaf uses a combination of lean ground beef and ground turkey for balanced flavor and moisture. Panko breadcrumbs bind the mixture while keeping the texture light.

The meatloaf is formed into a loaf shape on a foil-lined pan coated with non-stick spray to allow juices to drain away. Ingredients

  • 1 pound ground beef lean
  • 1 pound ground turkey or ground chicken
  • ½ cup panko bread crumbs
  • 1 large egg
  • 1 carrot chopped
  • 1 small onion chopped
  • ¼ cup barbecue sauce or ketchup or chili sauce
  • 2 teaspoons yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons parsley or 2 teaspoons dried parsley, chopped, fresh
  • 1 teaspoon salt or more to taste
  • ½ teaspoon black pepper

Topping

  • ¾ cup barbecue sauce or half bbq sauce and half chili sauce

Instructions

  1. Preheat oven to 350°F.
  2. In a blender combine egg, carrot, onion, bbq sauce, mustard, Worcestershire sauce, parsley, and pepper. Blend until the carrot & onion are finely chopped and the mixture is fairly smooth (a few chunks are ok).
  3. In a large bowl, combine blended mixture, beef, turkey and bread crumbs. Mix until evenly combined.
  4. Spray a foil-lined pan very well with non-stick spray. Place the meat on the pan and form into a loaf shape about 4" wide x 3" high. Cover with foil to create a seal.
  5. Bake for 1 hour. Remove foil, spread topping over meatloaf, and bake an additional 15-30 minutes or until meatloaf reaches 160°F. (The temperature will rise to 165°F while resting)
  6. Let rest 10 minutes before slicing.

Notes

  • Do not overmix the meat to avoid a tough texture.
  • Additional finely blended vegetables can be added as long as the meat mixture holds together.
  • Forming the loaf on a pan rather than in a loaf pan helps juices drain and encourages a crisper crust.
  • Remove from the oven at 160°F as the temperature will rise to 165°F while resting.
