Description

Ingredients
- 2 cups quick oats (see Note for substitution)
- 1/2 /2 teaspoon baking soda
- 2 1/2 /2 cups buttermilk (see Note for substitution)
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1/3 /3 cup vegetable oil or canola oil
- 2 egg beaten
Instructions
- In a large bowl, combine oats, baking soda, and buttermilk. Let mixture stand for 5 minutes.
- In another bowl combine flour, baking powder, salt, and sugar.
- Add the oil and eggs to the oat mixture and stir to combine.
- Add the dry ingredients to the oat mixture and stir until blended.
- Drop batter on lightly greased griddle or skillet on medium heat. .
- Top with your favorite pancake topping: syrup, yogurt, fruit, applesauce, peanut butter, or jam.
Notes
- Pulse old-fashioned oats in a blender briefly to substitute for quick oats if needed.
- Make a buttermilk substitute by combining milk with white vinegar or lemon juice and letting it sit until it curdles.
