  • 1/2 /2 teaspoon baking soda
  • 2 1/2 /2 cups buttermilk (see Note for substitution)
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/3 /3 cup vegetable oil or canola oil
  • 2 egg beaten

Instructions

  1. In a large bowl, combine oats, baking soda, and buttermilk. Let mixture stand for 5 minutes.
  2. In another bowl combine flour, baking powder, salt, and sugar.
  3. Add the oil and eggs to the oat mixture and stir to combine.
  4. Add the dry ingredients to the oat mixture and stir until blended.
  5. Drop batter on lightly greased griddle or skillet on medium heat. .
  6. Top with your favorite pancake topping: syrup, yogurt, fruit, applesauce, peanut butter, or jam.

Notes

  • Pulse old-fashioned oats in a blender briefly to substitute for quick oats if needed.
  • Make a buttermilk substitute by combining milk with white vinegar or lemon juice and letting it sit until it curdles.
