Healthy Peach Oatmeal Cookies

Healthy Peach Oatmeal Cookies combine mashed banana, almond butter, and pure maple syrup with quick oats, salt, and fresh peach chunks to create soft, chewy cookies with a gentle sweetness and fruity bursts. These cookies offer a wholesome texture and natural flavor, suitable for snack or breakfast treats without refined sugars or flours.

Description

The recipe blends ripe mashed bananas with almond butter and maple syrup to form the wet base, which is then mixed with quick oats and sea salt to create a thick dough. Folding in chopped fresh peaches adds moistness and natural sweetness throughout. Cookies are shaped on a baking sheet and baked until edges are lightly golden and the centers feel set, maintaining a soft and tender crumb.

The oats provide a hearty texture while the almond butter contributes richness and binding. The natural sugars from banana, maple syrup, and peaches replace added refined sugars, making these cookies mildly sweet and flavorful. Baking times vary with cookie size, ensuring the ideal balance between softness and structure.

These cookies keep well refrigerated for several days and freeze easily for longer storage. For a variation, unsweetened applesauce can substitute mashed bananas, with additional brown sugar added to maintain sweetness. Optional vanilla extract and cinnamon can be added for extra aroma and warmth.

Ingredients

Servings
  • 2 banana mashed (⅔ cup, ripe
  • ¼ cup (60 ml) maple syrup pure
  • 2/3 cup (160 g) almond butter unsweetened
  • 2 cups (180 g) quick oats
  • 1/2 tsp salt sea salt
  • 1 large peach chopped into small chunks (about 1 cup, ripe

Optional Additions:

  • 1 tsp vanilla extract pure
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper. If you don't have parchment paper on hand, spray the baking sheet with cooking spray.Mash the bananas into a large mixing bowl until smooth and most of the lumps are out.Add in the almond butter and pure maple syrup and mix all the wet ingredients together until a thick, sticky creamy substance forms.Pour in the oats and sea salt (dry ingredients) and mix well until a thick dough forms. Finally, gently stir in the chopped peaches.Spoon the peach mixture onto the prepared cookie sheet, forming any size cookies you like. The cookies will remain the same size and shape as the way they start, so shape cookie dough accordingly. I like making enormous cookies, but you can absolutely make small cookies too. Bake for 10 to 15 minutes, or until the cookies are lightly golden brown around the edges and feel set up when poked.Smaller cookies require less time (8 to 10 minutes), whereas larger cookies require more time (12 to 15 minutes). Allow the cookies to cool to room temperature before removing them from the cookie sheet. Serve and enjoy!

Notes

  • Store cookies in an airtight container in the refrigerator for up to five days.
  • Freeze cookies in a sealed bag for up to three months; thaw before eating.
  • Bananas may be substituted with unsweetened applesauce, adding brown sugar to adjust sweetness as needed.
