Healthy Pumpkin Banana Oat Muffins

These Healthy Pumpkin Banana Oat Muffins combine ripe bananas, creamy Greek yogurt, pumpkin puree, and rolled oats to create a moist, wholesome muffin. The use of whole wheat flour, baking powder, baking soda, and pumpkin spice gives a gentle rise and subtle spice, offering a mildly sweet and tender texture. They are a practical choice for breakfast or a snack, providing a comforting balance of fruit and fall flavors.

Description

Healthy Pumpkin Banana Oat Muffins blend mashed bananas, Greek yogurt, and pumpkin puree with rolled oats and whole wheat flour for a dense yet tender muffin. The baking powder and baking soda help the muffins rise smoothly while pumpkin spice and cinnamon add warm undertones. Maple syrup and melted butter contribute sweetness and moisture to the batter, which rests before baking to hydrate the oats and develop flavor.

The muffins are baked until set with slightly browned edges and a soft crumb inside. A sprinkle of oats on top adds a bit of texture. These muffins work well as a morning treat or midday snack, especially when paired with coffee or tea.

Let the muffins cool before removing them from the tin to preserve their shape. Storing leftover muffins in an airtight container helps maintain freshness for a couple of days.
