Ingredients

Servings
  • ¾ cup hummus O Organics brand
  • 10 grape tomatoes seeds removed & diced, O Organics brand
  • ¾ cup guacamole O Organics brand
  • lime juice juice of ½ lime
  • ¾ cup quinoa cooked, O Organics brand
  • ¾ cup red bell pepper diced
  • ¾ cup cucumber seeds removed, diced
  • 1 ¾ ounces feta cheese about ⅓ cup, crumbled

For Serving:

  • vegetable raw
  • Pita chips
  • tortilla chips

Instructions

  1. Spread the hummus on the bottom of a glass baking dish (I used a 9- by 6-inch dish). Sprinkle the diced tomatoes over top of the hummus.
  2. Dollop the guacamole on top of the tomatoes and gently spread with a rubber spatula. Squeeze the lime juice over the guacamole.
  3. On top of the guacamole, sprinkle the quinoa, then layer the red bell pepper, cucumber and feta.
  4. Serve with raw vegetables, pita chips and tortilla chips
