Healthy Raspberry Cookies

These Healthy Raspberry Cookies feature rolled oats, mashed bananas, almond butter, and a touch of protein powder to create chewy, naturally sweetened cookies. Fresh raspberries add bursts of tartness, while optional chocolate chips offer a mild sweetness. The cookies are formed into shapes and baked until golden at the edges, resulting in a wholesome snack that balances fruit, nuts, and grains.

Description

The cookie dough blends rolled oats with mashed bananas and almond butter, binding the mixture while providing moisture and a soft crumb. Protein powder adds extra nutrition and slightly enhances texture. Fresh raspberries folded in contribute bright, juicy notes and contrast with the creamy almond butter. Chocolate chips can be added optionally to introduce occasional pockets of sweetness.

Baked at 180°C (350°F), the cookies develop lightly crisp edges with a tender center. The use of nutrient-dense ingredients lends these cookies an appealing natural sweetness without refined sugars. They are shaped as small rounds before baking on parchment paper and should cool completely on the baking sheet to firm up.

This recipe provides a straightforward way to enjoy a snack combining oats and fruit, suitable for those looking for a balanced yet tasty treat. Portion control is achieved by forming 12 similarly sized cookies, and the recipe can be baked in batches or on multiple trays depending on oven size.
