Healthy Turkey Wild Rice Soup

This turkey wild rice soup features tender wild rice cooked with celery, kidney beans, and aromatic Italian seasoning in a chicken broth base. Leftover shredded turkey adds protein while keeping the soup hearty without heaviness. The seasoning and gentle simmering meld into a comforting, thickened broth. This soup is ideal to warm up on cooler days and helps use leftover turkey efficiently.

Description

The Healthy Turkey Wild Rice Soup brings together wild rice cooked in a flavorful chicken broth infused with dried Italian seasoning and garlic powder. Celery adds aromatic crunch and kidney beans contribute extra texture and fiber. After the rice is tender, shredded turkey breast folds into the pot to enrich the soup's protein content without overpowering the mild broth.

The cooking method involves simmering to perfect the rice texture, then adjusting liquid levels with added water to ensure the soup consistency remains balanced since wild rice absorbs substantial broth. Seasoning with salt and pepper customizes the flavor. Fresh herbs can be added as a garnish for a final bright note.

This soup works well for repurposing leftover turkey, including from Thanksgiving, or shredded chicken as an alternative. Its balanced ingredients make it suitable for a wholesome lunch or light dinner. The recipe allows flexible liquid adjustments for personal texture preference. The warming qualities and familiar flavors offer uncomplicated comfort food.

It is best to taste before serving to ensure desired seasoning. Leftover soup reheats well and can freeze if stored properly. Adding herbs just before serving preserves freshness.

Ingredients

Servings
  • 4 cups chicken broth low sodium
  • 1 tablespoon Italian seasoning dried
  • 1 teaspoon garlic powder
  • 3 celery ribs chopped
  • 1 can red kidney beans drained
  • 1 box wild rice (about 1- 1 ⅓ cups)
  • 2-3 cups turkey breast leftover thanksgiving turkey works great for this, or shredded chicken works as well, shredded cooked
  • 2-3 cups water as needed
  • salt to taste
  • black pepper to taste
  • herbs optional, fresh, for garnish

Instructions

  1. In a large stock pot combine chicken broth, Italian seasoning, garlic powder, celery, kidney beans, and wild rice. Bring to a boil over medium-high heat, then reduce to a simmer.
  2. Cover and cook 15-20 minutes until rice is tender and fully cooked.
  3. Stir in shredded turkey (or chicken), salt and pepper to taste, and water as needed until soup reaches desired consistency. (This won't change the thickness of the broth, but since the rice absorbs a lot of the chicken broth, you'll want to add more liquid to keep that soup consistency rather than a chili-like consistency)
  4. Cook about 5 minutes longer until turkey is hot throughout.
  5. Taste, add more salt and pepper if needed, and garnish with fresh herbs if desired before serving.

Notes

  • This soup is an effective way to use leftover Thanksgiving turkey or shredded chicken.
  • Adjust water amounts to attain preferred soup consistency after cooking the wild rice.
  • Fresh herbs can be added as garnish to enhance aroma and appearance.
