Description
This Waldorf Salad offers a light and protein-rich variation on the traditional fruit and nut salad by incorporating shredded rotisserie chicken alongside classic components like diced apples, halved grapes, celery, and red onion. The pecans add crunch and texture contrast. A dressing blending mayonnaise and plain nonfat Greek yogurt with lemon juice, salt, sugar, and pepper ties the ingredients together with a creamy, tangy coating. Mixed greens are tossed in for extra freshness and color. The preparation involves evenly dicing produce for consistent texture and mixing all components gently yet thoroughly. The salad can be served over greens or in a sandwich, providing a balance of sweetness, acidity, and savory notes from the chicken and nuts.
For meal prep, the greens are better added just before serving to keep them crisp. The dressing can be adjusted for flavor balance by tasting before serving.
Ingredients
For The Dressing:
- 1/2 cup mayonnaise light, 120g
- 1/2 cup Greek yogurt plain nonfat, (120g
- 2 tsp lemon juice
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/4 tsp black pepper
For The Salad:
- 4 cups rotisserie chicken cooked, shredded, 500g
- 1 medium red apple finely diced, 160g
- 1 cup red grapes halved, 150g
- 1 cup celery finely diced, 130g
- 1/4 cup red onion finely diced, 60g
- 1/2 cup pecans roughly chopped, glazed or regular, 56g
- 3 cups mixed greens
Instructions
- Start by washing and preparing the produce. I used the small dicer on my vegetable chopper for the apple, celery, and red onion so they were even and to save time.
- Mix together the dressing ingredients in a small bowl.
- In a large bowl, add the chicken, apples, grapes, celery, red onions and pecans.
- Add the dressing and toss everything to evenly coat.
- Then toss in the mixed greens*.
- Taste and add any extra salt, sugar, lemon juice, mayo, etc to taste. Serve in a croissant with mixed greens underneath (or bread of choice) and enjoy!
Notes
- For meal prep, omit the mixed greens and add them just before serving to prevent sogginess.
