Healthy Zucchini Bread

This homemade healthy zucchini bread has a soft and tender texture! The flavor is warm, cozy, and naturally sweet. This healthier quick bread is great any time of the day. Both kids and adults love this zucchini bread!

Ingredients

Servings
  • 1 ½ cups Paleo baking flour
  • ½ tsp salt sea salt
  • 1 tsp baking soda
  • cup coconut sugar
  • 1 ½ cups zucchini excess moisture squeezed out, grated
  • ½ cup coconut oil melted
  • 2 egg
  • 1 tsp vanilla extract
  • ¾ cup mini chocolate chips

Instructions

  1. First, preheat the oven to 350 degrees Fahrenheit. Line a standard bread pan with parchment paper.
  2. In a large mixing bowl, combine the Paleo baking flour, sea salt, baking soda, and coconut sugar.
  3. Then, add in the grated zucchini, melted coconut oil, eggs, and vanilla extract. Stir together.
  4. Add in the mini chocolate chips. Stir together.
  5. Transfer the batter to the parchment-lined bread pan. If desired, sprinkle a few more chocolate chips on top.
  6. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted comes out clean.
  7. Finally, remove from the oven. Fully cool. Then, slice and serve!

  • Be sure to squeeze out the excess moisture from the grated zucchini.  Use a cheesecloth or paper towel.
  • If you are not gluten free, feel free to substitute with whole wheat flour.
  • Do not bake the bread too long.  It is done baking when a toothpick inserted comes out clean.
  • We suggest using Enjoy Life mini chocolate chips, although they do contain a little added sugar.
  • Store leftovers in an airtight container for up to 3 days.
  • Freeze the bread for up to 2 months.
