  • 1 cup pumpkin puree
  • 2 eggs
  • ½ cup plain yogurt
  • ½ cup canola oil
  • 1 tsp vanilla
  • 1 cup unrefined sugar (brown/coconut)
  • cups flour
  • ¾ cup oat flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cardamom

Instructions

  1. Preheat the oven to 180°C/350°F. Line a loaf pan with parchment paper.
  2. Whisk together the pumpkin, eggs, yogurt, oil, vanilla and sugar.
  3. Add the flours, baking powder, salt and spices. Stir until well combined and smooth.
  4. Transfer the batter to the prepared pan.
  5. Place in the oven and allow to bake for 45 minutes or until a toothpick inserted comes out clean.
  6. Remove from the oven and allow to cool completely before serving.
