Hearts of Palm Pasta Recipe
Description
The recipe starts by rinsing and drying the hearts of palm noodles, which have a mild taste and tender texture resembling pasta. Garlic is briefly sautéed in olive oil to release aroma, then fresh chopped spinach is added gradually to wilt down. Cream cheese, milk, Parmesan, and seasonings including Italian herbs, crushed red pepper, nutmeg, salt, and pepper are stirred in to form a creamy sauce.
Simmering the sauce thickens it gently, coating the noodles when added back to the pan. The gentle warming melds flavors without overpowering the subtle hearts of palm. Parmesan cheese sprinkled on top finishes the dish with savory richness.

Ingredients
- 24 ounces hearts of palm pasta drained and rinsed
- 1 tablespoon olive oil
- 3-4 cloves garlic minced
- 16 ounces spinach chopped, fresh baby
- 8 ounces cream cheese cut into cubes
- 1 cup milk
- ½ cup Parmesan Cheese grated
- 1 teaspoon Italian seasoning dried
- ¼ - ½ teaspoon crushed red pepper
- 1/8 teaspoon ground nutmeg

Instructions
- Place the hearts of palm noodles in a colander and rinse. Then shake the colander and allow the hearts of palm to dry as you prep the spinach pasta sauce.
- Set a large sauté pan over medium heat. Add the olive oil and garlic. Sauté the garlic for 1 to 2 minutes as you roughly chop the spinach.
- Stir the spinach into the pan, a couple handfuls at a time, until it starts to wilt down. Once all the chopped spinach is in the pan, add in the cream cheese, milk, Parmesan cheese, dried Italian seasoning, crushed red pepper, and ground nutmeg.
- Stir and allow the sauce to simmer as the cream cheese and Parmesan melt. Simmer approximately 5 minutes until the sauce starts to thicken to a “heavy cream” consistency.
- Stir in the hearts of palm pasta and simmer another 1 to 2 minutes to warm the noodles. Serve warm with an extra sprinkling of Parmesan cheese.
