Heirloom Tomato Salad

This Heirloom Tomato Salad highlights the natural taste and texture of ripe heirloom tomatoes, lightly seasoned and dressed in a combination of olive oil, white wine vinegar, garlic, and fresh thyme. The salad offers a fresh and juicy bite with a balance of acidity and herbal notes, enhanced by resting time to meld the flavors. It's an elegant way to enjoy seasonal tomatoes, especially suitable for warm weather meals or as a refreshing side dish.

Description

Heirloom Tomato Salad is composed mainly of thinly sliced fresh tomatoes, enhanced by a simple dressing made from olive oil, white wine vinegar, minced garlic, and chopped fresh thyme. The tomatoes are first salted to release their juices, which mix with the dressing for a vibrant flavor. A sprinkle of freshly ground black pepper rounds out the flavor profile. The salad is best when allowed to rest for a while before serving, enabling the ingredients to meld and the tomatoes to become tender without losing their shape.

The texture combines the soft but firm tomato slices with the smoothness of the dressing and the slight herbaceous bite of thyme. It is served chilled or at room temperature, making it ideal for a light starter or a side complementing grilled dishes or sandwiches.

The original notes advise using fresh, at-peak tomatoes kept at room temperature for optimal ripeness and flavor. Salt seasoning is encouraged to bring out tomato juices, and leftovers should not be refrigerated to avoid sogginess; instead, keeping the dressing separate and returning it to room temperature before serving is recommended.

Ingredients

Servings
  • 1 kg tomato about 3-4, heirloom
  • 2 teaspoon salt
  • 60 ml olive oil extra virgin
  • 1 tablespoon white wine vinegar
  • 1 garlic finely minced, clove
  • 1 teaspoon thyme fresh, finely chopped
  • 1 teaspoon black pepper freshly ground

Instructions

  1. Thinly slice the tomatoes about ¼" thick. Slice the cherry tomatoes in half (if using). Alternatively, cut the tomatoes into wedges if you prefer.
  2. Lay the tomatoes on a large platter and season with sea salt. (Allow them to rest for 15 minutes).
  3. Prepare the salad dressing by whisking the olive oil, garlic and vinegar together.
  4. Sprinkle over the freshly chopped thyme leaves.
  5. Drizzle over the dressing and add the black pepper.
  6. Allow the salad to rest for 30 minutes before serving.

Notes

  • Use fresh, ripe heirloom tomatoes stored at room temperature to preserve texture and flavor.
  • Salt the tomatoes to draw out their juices, enhancing the salad's natural taste.
  • Prepare the dressing ahead and refrigerate it separately; bring to room temperature before drizzling over the salad.
  • Avoid refrigerating leftovers with tomatoes to prevent them from becoming mushy; consume fresh when possible.
