If you’re looking for a way to jazz up a salad or switch up your side dishes, you have to try butter beans with herbs. My butter bean recipe is a mouth-watering flavor explosion, thanks to the addition of lemon and wonderful fragrant herbs. Trust me; your taste buds will thank you!

Ingredients
- 2 tablespoons olive oil
- 1 can butter beans 15 ounces, NOT drained
- ¼ teaspoon pepper
- ½ teaspoon salt
- ¼ teaspoon lemon zest
- ½ teaspoon rosemary dried or fresh
- 1 teaspoon parsley dried or fresh
- 1 teaspoon basil dried or fresh
Instructions
- Heat the olive oil in a medium skillet until shimmering.
- Add the beans and half of the liquid in the can.
- Add the salt and pepper. If you're using dried herbs, add them now.
- Bring to a simmer.
- Simmer for 5-8 minutes or until the butter beans are tender.
- If you're using fresh herbs, add them to finish and stir to combine.
