Herb Butter (Turkey Butter) + Video
Description
This Herb Butter is made by mixing softened butter with crushed garlic and finely chopped fresh herbs including parsley, chives, and thyme, along with salt to season. The ingredients are well incorporated and then shaped into a cylinder by rolling in wax paper. This shape facilitates uniform slices that can be placed atop hot cooked meats, such as steak or turkey, where the butter melts and imparts a fresh herb aroma and garlic depth.
The butter becomes a flavorful finish that enhances the richness of grilled or pan-seared meats. The gentle blending of herbs and garlic with butter ensures a spreadable consistency and balanced flavor.
The preparation can be refrigerated to firm the butter and allow the flavors to meld before slicing. Additional ingredients like blue cheese shown in the accompanying video can be added optionally for different flavor profiles.
Ingredients
- 1/2 cup butter softened
- 2 cloves garlic crushed
- 2 tbsp parsley chopped
- 1 tbsp chives chopped
- 1 tsp thyme chopped
- 1/4 tsp salt
Instructions
- Let butter come to room temperature and place in a bowl
- Using the side of a knife, smash the cloves of garlic to remove the skins and chop fine.
- Chop the fresh herbs and mix in with butter, garlic and salt.
- With a spatula incorporate all the ingredients and fold onto a sheet of wax paper.
- Roll the butter mixture into a cylindrical shape working with the wax paper. (See Note 1) Twist the edges and refrigerate until firm.
- Remove from refrigerator, unroll and slice into pieces to top each steak.
- Roll up and refrigerate the remaining compound butter.
Notes
- Use a plastic wrap or wax paper to help shape the butter mixture into a neat cylinder for even slicing.
- To maintain the cylindrical shape, place the wrapped butter inside a cardboard tube, such as a bath tissue cardboard roll, and pat the edges for a perfect form.
- After shaping, refrigerate the compound butter until firm before slicing for serving.
- Variations may include adding blue cheese for a different flavor, as shown in the recipe video.
