  • 4 chicken thigh trimmed of extra fat, boneless, skinless
  • 1 tbsp basil finely chopped, fresh
  • 1 tbsp thyme finely chopped, fresh leaves
  • 2 tsp oregano finely chopped, fresh leaves
  • lemon juice and zest from half
  • 2 tbsp olive oil
  • 2 garlic minced, large cloves

Instructions

  1. Combine the chicken thighs in a large Ziplock bag with basil, thyme, oregano, lemon juice, lemon zest, olive oil, and minced garlic. Mix until evenly coated, then set inside the refrigerator to marinate for 30 minutes.
  2. Remove the chicken from the refrigerator 10 minutes before cooking.
  3. Heat a grill pan coated with cooking spray over medium-high heat.
  4. Season both sides of the chicken thighs with sea salt and freshly cracked pepper, to taste.
  5. Place the chicken thighs on the HOT grill pan and reduce heat to medium, then cook for 7-8 minutes, flip, and continue to cook for 6-7 minutes, or until the chicken is cooked through.
  6. Remove the chicken from the grill pan and set it aside to rest for 5 minutes. Serve with lemon wedges and enjoy.
