  • 1 pound yellow Idaho potatoes cut into 1-2 inch pieces
  • ¼ cup olive oil divided
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon salt divided
  • ½ teaspoon dried basil
  • ½ teaspoon ground black pepper
  • 1 pound green beans with the stems cut off

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit and line a 9x13 baking pan with parchment paper.
  2. Toss the potatoes, 2 tablespoons of olive oil, rosemary, garlic powder, ½ teaspoon of salt, basil and pepper together on the pan.
  3. Spread the potatoes out so they can bake evenly then bake for 5 minutes.
  4. In the meantime, toss the green beans in the remaining olive oil and salt.
  5. Toss the potatoes then add the green beans to the pan in even layer and bake again for 30-40 minutes or until the potatoes are fork tender and the green beans are soft but crisp.
  6. Serve with freshly minced parsley for garnish.
