Herbed Cucumber and Feta Salad
Description
Herbed Cucumber and Feta Salad presents a blend of sliced cucumbers and red onions tossed in a simple dressing of olive oil and fresh lemon juice. The inclusion of fresh mint and dill infuses the salad with an aromatic freshness that complements the crunch of the vegetables. Crumbled feta cheese on top adds a creamy texture and salty tang, enhancing the overall flavor profile. The salad is easy to prepare and is recommended to be served chilled to maintain its crispness and refreshing qualities. It can be served on its own or alongside grilled dishes, making it a versatile addition to a summer meal.
Ingredients
- 4 cups cucumber , such as English or Persian cucumbers, halved then sliced into rounds
- ½ cup onion red, chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice fresh
- ½ cup mint chopped, fresh
- ½ cup dill chopped, fresh
- 1 teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
- 6 ounces feta cheese , crumbled
Instructions
- Add the cucumbers and red onion to a large mixing bowl and drizzle with olive oil and lemon juice. Toss to coat. Add the mint, dill, kosher salt, and freshly ground black pepper and toss again.
