Herbed Roast Turkey Breast

Herbed Roast Turkey Breast features a boneless turkey breast rubbed with a blend of parsley, rosemary, sage, and thyme, then roasted with sliced onion and chicken broth for moisture. This method produces a tender, flavorful roast with a golden exterior, perfect for slicing and serving as a main dish.

Description

This recipe uses a boneless turkey breast seasoned generously with a combination of fresh or dried herbs common in poultry seasoning: parsley, rosemary, sage, and thyme. After allowing the meat to reach room temperature, it is brushed with olive oil and the herb mixture is applied, bringing savory herbal aroma and flavor.

The turkey breast is roasted uncovered in a preheated 350°F oven, placed in a dish with thinly sliced onions and a cup of chicken broth to keep the environment moist. The cooking time varies with the breast weight, but the key indicator is an internal temperature of 165°F, ensuring safe doneness with juicy results. The roast rests before slicing, which lets juices redistribute for tenderness.

The recipe suggests storing leftovers in the refrigerator up to 4 days and provides cooking times based on size. Optional bone-in turkey breast instructions are included, with adjusted times and temperatures. Drippings can be used for making gravy, thickened with cornstarch for added richness.

Ingredients

Servings
  • 2 ½ to 3 ½ pounds turkey breast boneless
  • 1 ½ tablespoons olive oil or as needed
  • 1 tablespoon parsley or 1 teaspoon dried, chopped, fresh
  • 1 teaspoon rosemary or ½ teaspoon dried, fresh
  • 1 teaspoon sage or ¼ teaspoon ground sage, chopped, fresh
  • 1 teaspoon thyme or ¼ teaspoon dried thyme leaves, fresh leaves
  • salt
  • black pepper
  • 1 small onion thinly sliced
  • 1 cup chicken broth or as needed

Instructions

  1. Remove the turkey breast from the fridge and let it sit at room temperature for 30 to 60 minutes.
  2. Preheat oven to 350°F.
  3. Tie the turkey breast (if it's not tied or in a net already). If it is already in a net, leave it in the net to cook. Dab the outside dry with a paper towel.
  4. Brush the turkey breast with olive oil. Generously sprinkle with herbs, salt, & pepper.
  5. Place the turkey breast in a small casserole dish and nestle onions (and extra herbs if desired) alongside the turkey.
  6. Roast the turkey breast uncovered for 30 minutes. Add enough broth to cover the bottom of the dish, about 1 cup.
  7. Continue roasting for 30 to 60 minutes or until the temperature in the thickest part of the breast reaches 165°F. Estimated cook times are listed below.
  8. Remove from oven and let rest for 10 to 15 minutes before slicing.

Notes

  • The herb blend can use store-bought poultry seasoning or individual dried/fresh parsley, rosemary, sage, and thyme.
  • Check internal temperature early to avoid overcooking; the meat will continue cooking slightly while resting.
  • If using bone-in turkey breast, increase cooking time and adjust oven temperature as directed.
  • Leftover turkey breast can be refrigerated for up to 4 days.
  • Drippings are suitable for making gravy, thickened with cornstarch if needed.
