Hidden Veggie Turkey Tacos
Description
This recipe for Hidden Veggie Turkey Tacos incorporates diced zucchini and riced cauliflower into ground turkey to boost vegetable intake subtly. The vegetables are sautéed until tender before adding the turkey and a blend of spices such as chili powder, cumin, garlic powder, smoked paprika, and cayenne pepper for a layered flavor profile. Tomato paste combined with water is stirred in towards the end to create a cohesive, flavorful mixture that clings well to taco shells or tortillas.
The sautéing method softens the vegetables while preserving some texture, mingling well with the crumbled turkey that browns evenly in the pan. Seasonings give warmth and a touch of heat, balancing the mildness of the vegetables. This filling can be served in tortillas with preferred toppings for a customizable meal.
Because the recipe includes plenty of spices and tomato paste, it remains moist without additional sauces. The inclusion of nutritious vegetables makes it a practical choice to introduce more greens into tacos while maintaining familiar flavors.
