  • 1/4 cup coconut sugar
  • 1 tablespoon cinnamon
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons coconut oil melted
  • 2 egg
  • 1 1/2 teaspoons vanilla
  • 1 cup banana 270 grams, or about 2 large bananas, mashed

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line a 9-inch loaf pan with parchment paper, rubbing the sides with coconut oil.
  2. In a medium bowl, whisk the flour, protein powder, sugar, cinnamon, baking soda, and salt.
  3. In a separate large bowl, whisk the oil, eggs, and vanilla. Add in the mashed banana and whisk until combined.
  4. Add the dry ingredients to the wet and whisk until combined.
  5. Pour into the prepared pan and bake until dark-brown and a toothpick inserted in the center comes out clean, about 55 minutes to 1 hour.
