Hobo Dinner Foil Packets
Description
This recipe assembles a hearty meal by mixing ground beef with mayonnaise, Worcestershire sauce, and dried minced onion to form flavorful hamburger patties. Vegetables including halved baby potatoes, sliced carrots, and thinly sliced onions are tossed with olive oil and Italian seasoning in two stages to coat evenly. The vegetables are divided into six portions, each topped with a beef patty, then wrapped tightly in foil packets.
The packets are cooked on a medium grill or at 325°F for 20 to 25 minutes, turning and shaking them occasionally to prevent burning and ensure even cooking. The beef reaches a safe medium-well temperature at 150°F, while the vegetables become tender. After cooking, grated Colby Jack cheese is added for a melty finish and the packets can be garnished with fresh parsley if desired.
These foil packets provide an easy, all-in-one meal option ideal for outdoor grilling and minimal cleanup. They serve well immediately off the grill and can be stored in the refrigerator if there are leftovers.
