Holiday Stuffing with Black Truffle Sausage

Holiday Stuffing with Black Truffle Sausage features a savory blend of multiple sausage varieties combined with seasoned bread cubes, aromatic onion and celery, fresh herbs, garlic, and turkey stock. The mixture is baked until golden and flavorful, enriched by butter brushed over the top for a rich finish.

Description

This stuffing begins by browning peeled sausage meat from black truffle, thyme, whiskey, and apple sausages, which provide a complex mix of savory, herbal, sweet, and truffle-infused flavors. The excess fat is drained, and butter is used to sauté diced onions and celery until translucent. The cooked vegetables and sausage are combined with finely chopped parsley, sage, thyme, and a touch of garlic in seasoned bread cubes, moistened with turkey stock to bind the stuffing.

The stuffing is spread evenly into a greased 9x13-inch pan, then topped with additional melted butter to promote browning and moistness during baking. It bakes uncovered at 350°F for an hour, then is checked for golden crust development before covering to finish cooking, preserving softness inside and a lightly crisp top.

This stuffing offers an aromatic, rich, and textured side dish ideal for holiday meals, complementing roasted turkey or other poultry. The blend of sausages and herbs provides depth and seasonal character, while turkey stock and butter help maintain a moist, tender crumb and flavorful crust.

Ingredients

Servings
  • 10 ounces black truffle sausage
  • 10 ounces thyme sausage
  • 5 ounces whiskey sausage
  • 5 ounces apple sausage
  • 3 cups turkey stock
  • 2 seasoned bread cubes 12 ounce packages, for stuffing
  • 1.5 cups onion diced
  • 1.5 cups celery diced
  • 1 tick butter divided, salted
  • 2 Tablespoons parsley finely chopped
  • 1 Tablespoon garlic squeeze
  • 1 Tablespoon sage finely chopped
  • 1 teaspoon thyme stemmed and finely chopped

Instructions

  1. Dice the onion and celery and finely chop the herbs.
  2. Heat a skillet over medium heat. Remove the sausages from their casings and cook in the skillet until browned and cooked though. Break the sausage up as it cooks.
  3. Drain the excess fat and place the meat in a bowl. Do not wipe out the skillet.
  4. Add 2 tablespoons of butter to the skillet. When the butter is melted sauté the onion and celery. Cook until soft and translucent.
  5. Mix the diced herbs with the bread crumbs in a large bowl. Add in the garlic squeeze. Next stir in the cooked sausage and veggies and mix well. Add the turkey stock to the stuffing mixture and stir to combine.
  6. Spread the sausage stuffing mixture evenly into a greased 9x13 pan. Melt the remaining 6 tablespoons of butter and pour over the top of the stuffing.
  7. Bake the stuffing at 350 degrees for 60 minutes, uncovered. At this point, rotate the stuffing. If it is nicely browned, cover with foil and cook 10-15 more minutes. If not yet browned, leave uncovered and cook 10-15 more minutes.
  8. Serve warm with your holiday meal.
