Home Fries
Description
Home Fries start with peeled, chopped russet potatoes that are partially softened in the microwave to ensure a tender interior. They are then pan-fried in canola oil, allowing the potatoes to brown on each side and develop a crispy surface. Red bell pepper and sweet Vidalia onions are cooked alongside with garlic powder and smoked paprika, incorporating a subtle smoky and slightly sweet note. The cooking method balances a tender center with crisp edges, making the potatoes flavorful and texturally interesting. Salt and pepper season throughout for balance.
This recipe works well as a breakfast side or a comforting accompaniment to many main courses, adding flavorful vegetables and seasoning with simple pantry ingredients. The slight smokiness and sweetness complement eggs or grilled meats. Garnishing with chopped green onions adds a fresh element that brightens the dish.
Note that minimal stirring during frying helps the potatoes develop a better browned crust. Using a microwave to soften potatoes reduces overall cooking time while ensuring even doneness without excessive pan time.
Ingredients
- 2 large russet potato peeled, chopped
- 4 tablespoons canola oil divided
- ½ red bell pepper chopped
- ¼ cup vidalia onion chopped, sweet
- ½ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- salt to taste
- black pepper to taste
- green onion chopped, to taste, optional
Instructions
- Place chopped potatoes in a microwave safe bowl. Cover with plastic wrap. Microwave for about 4 minutes, stirring halfway throughout.
- Heat 3 tablespoons of canola oil over medium heat in a large nonstick pan. When oil is heated through, add potatoes to the pan. Season with salt and pepper, then stir. Cover. Cook for 3 to 5 minutes or until potatoes begin to brown on one side.
- Flip potatoes so the other side can be cooked. Cook for an additional 3 to 5 minutes.
- Slide potatoes to one side of the pan. In the open space, place the remaining 1 tablespoon of canola oil in the pan. Add peppers, onions, garlic powder, smoked paprika and additional salt and pepper if desired. Stir everything together. Cook for an additional 12 to 15 minutes, or until desired doneness is reached, stirring every couple of minutes.
- Garnish with green onion before serving if desired.
Notes
- Limit stirring while frying to allow potatoes to brown and crisp properly.
