Homemade Air Fryer Pancakes Recipe

These homemade air fryer pancakes are made from a classic batter of flour, sugar, baking powder, baking soda, salt, buttermilk, egg, and oil. The batter can include optional mix-ins like blueberries or chocolate chips. Cooking pancakes in aluminum pans without nonstick coating in an air fryer produces golden, mostly flat pancakes with tender crumb. They cook at 370°F for about 6-7 minutes until relaxed and browned on top, allowing a convenient way to prepare fluffy pancakes without a stovetop.

Description

The Homemade Air Fryer Pancakes Recipe uses traditional ingredients such as all-purpose flour, baking soda, and baking powder combined with buttermilk, which reacts with the soda to help the pancakes rise and keep them tender. The batter resting period allows some lumps to smooth out for an even texture. Mixing optional additions like blueberries or chocolate chips adds bursts of flavor and sweetness during cooking.

The method requires aluminum pans without nonstick surfaces to achieve better heat conduction and flatter pancake tops; nonstick pans may result in domed pancakes. The pans are sprayed lightly with oil to prevent sticking. Air frying at 370 degrees Fahrenheit cooks the pancakes evenly in 6 to 7 minutes, developing a golden-brown surface while keeping a soft interior.

This technique suits those seeking an alternative to pan-frying pancakes with less oil and convenient batch cooking. Using smaller 4-inch pans yields pancakes more easily managed in the air fryer basket. Adjust cook time slightly depending on the air fryer model and pancake size. The recipe notes include tips for substituting vinegar for buttermilk and adding mix-ins to customize the flavor.

  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/3 cups buttermilk *see note

  • 1/2 cup blueberries or other fruit

Instructions

Store Bought Mix

You can also make these with your favorite boxed pancake mix. Make it as directed on the package and skip to step #4.

Equipment Notes

Make the pancakes in an aluminum pan that DOES NOT have a nonstick finish. You will not get flat pancakes if you use a pan with a nonstick finish. Instead, they will be domed in the center. Use a 6-inch pan for large pancakes or 4-inch pans for smaller ones. Foil baking pans work fine.

  1. Mix flour, sugar, baking powder, baking soda, and salt in a medium bowl. Stir to mix.
  2. In a separate bowl, combine the buttermilk, egg, and oil. Stir to mix and break up the egg yolk.
  3. Pour the wet ingredients into the dry ingredients and whisk until most lumps are gone. If you are adding something, like blueberries, chocolate chips, or sprinkles, stir them in now.
  4. Let the batter rest for 5 minutes. Use this time to preheat the air fryer at 370 degrees F for 3-5 minutes.
  5. Spray your pan(s) with a little cooking spray. Add 1/4 cup batter to 4-inch pans and 1/2 cup to 6-inch pan. Use a spatula to spread the batter out to the edges of the pan.
  6. Air fry at 370 degrees F for 6-7 minutes until they are golden brown on top. They will cook on both sides, so there is no need for flipping.
  7. Use oven mitts to remove the pans from the air fryer. Dump them over onto a cooling rack, and the they should fall out. Then make another batch.
  8. Serve them immediately or put them in a preheated 200-degree F oven to keep warm until they are all done.

Notes

  • Use buttermilk or a buttermilk substitute (milk plus 1 teaspoon vinegar) for fluffier pancakes.
  • Employ aluminum pans without nonstick coating to get flat pancakes; nonstick pans may cause domed shapes.
  • Add up to ½ cup of mix-ins like blueberries or chocolate chips for variety.
  • Smaller 4-inch pans fit better in the air fryer and cook more evenly than larger 6-inch pans.
  • Check pancakes at 6 minutes; they’re done when golden brown on top to avoid overcooking.
