Description
The recipe starts with soaking dried great northern beans overnight to soften them. Bacon is crisped in a pot along with onions and jalapeño, releasing savory and slightly spicy notes. After draining the beans, their soaking liquid is combined with vegetable broth to create a flavorful cooking liquid. This broth is added back to the pot along with salt, black pepper, and cayenne to build the classic baked bean seasoning. The beans cook low and slow in the oven for 6 to 8 hours until soft and infused with flavor.
The result is a warm, comforting dish with tender beans coated in a thick sauce with smoky and sweet layers, suitable as a side dish or hearty main. Serve warm for best texture and taste.
Ingredients
- 1 pound great northern beans dried
- 1 pound Bacon chopped, thick cut
- 1 large yellow onion peeled & chopped
- 1 jalapeño seeded & chopped
- ½ cup dark brown sugar
- ¼ cup tomato paste
- ¼ cup molasses
- 3 cups vegetable broth plus more as needed
- 2 teaspoons salt
- 1 teaspoon black pepper
- ¼ teaspoon cayenne pepper
Instructions
- Place the dried beans in a food storage container. Cover with water, snap the lid in place, and soak overnight in the fridge.
- The next day preheat your oven to 250 degrees F. Place a large oven-safe pot over medium heat.
- Add the chopped bacon, onion, and jalapenos to the pot. Cook for about 5 minutes until the onions are soft.
- Stir in the brown sugar, tomato paste, and molasses. (Spray the measuring cup with cooking spray before pouring the molasses to help get it out easily.)
- Drain the beans, keeping the liquid reserved in a measuring cup. Add the beans to the pot.
- Add enough vegetable broth to bean liquid to total 4 cups and then pour the broth mixture into the pot. Raise heat to high and bring to a boil.
- Add the salt, pepper, and cayenne to the pot. Stir and then cover with the lid.
- Place in the oven for 6-8 hours until the beans are soft. Stir and serve warm.
