Description
Homemade BBQ Sauce uses tomato paste as the base, acidified with apple cider vinegar and sweetened with brown sugar and honey. Olive oil and Worcestershire sauce contribute to a rounded mouthfeel, and a mix of smoked paprika, garlic powder, onion powder, mustard, salt, black pepper, and a hint of cayenne create a layered flavor profile with smoky, sweet, and mildly spicy notes. The sauce is thinned and enriched with chicken stock, then simmered to thicken and concentrate the flavors.
The sauce develops a glossy, thick texture suitable for brushing over grilled or smoked meats, adding moisture and flavor. It also works well as a dipping sauce or in recipes calling for barbecue sauce. The cooking process requires occasional stirring and care to prevent splattering once thickened.
Once cooled, the sauce should be stored in an airtight container in the refrigerator and used within two weeks to maintain freshness and flavor integrity.
Ingredients
- 5 Tablespoons tomato paste (76g)
- 3 Tablespoons apple cider vinegar
- 3 Tablespoons dark brown sugar firmly packed
- 2 Tablespoons honey
- 1 Tablespoon olive oil
- 1 Tablespoon Worcestershire sauce
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground mustard
- 1 teaspoon table salt
- ½ teaspoon black pepper ground
- ⅛ teaspoon cayenne pepper
- 1 cup chicken stock (236ml)
Instructions
- In a small or medium-sized saucepan, combine all ingredients except chicken stock and whisk together to combine.
- Gradually whisk in chicken stock until completely combined.
- Turn stovetop heat to medium-low and whisk occasionally until sugar is dissolved (about 3 minutes).
- Increase heat to medium and simmer, stirring occasionally, until barbecue sauce is thickened, about 10-15 minutes. Note that the sauce has a tendency to splatter as it cooks and thickens, to keep your kitchen tidy and your skin and clothes unscathed, you can place a lid crookedly over the pot, leaving a gap on one edge for steam to escape.
- Allow sauce to cool then use as desired or in any recipe where barbecue sauce is called for.

- Store finished sauce in an airtight container refrigerated for up to two weeks.
