Homemade Biscuits

These homemade biscuits offer a flaky, tender texture achieved by grating cold butter into a flour mixture enriched with baking powder, baking soda, and salt. The combination of milk and vinegar creates a delicate dough that is folded and rolled to create layers before cutting out biscuits. They bake up golden and soft, perfect for breakfast or as a side.

Description

Homemade Biscuits start with freezing butter to keep it solid for grating into a mix of all-purpose flour, leavening agents, and salt. The grated butter is worked into the flour until the mixture resembles coarse cornmeal, helping to create flaky layers. Milk combined with vinegar is stirred in to form a tender dough.

The dough is rolled and folded in thirds, similar to a letter fold, to build layers, then cut into rounds using a biscuit cutter or glass. Baking at a high temperature develops a golden crust while preserving a soft interior with distinct layers. These biscuits can accompany many meals or be enjoyed with butter and jam.

Ingredients

Servings
  • 8 Tbsp butter $1.12, salted
  • 2.5 cups all-purpose flour $0.39
  • 1 Tbsp baking powder $0.06
  • 1/2 tsp baking soda $0.02
  • 3/4 tsp salt $0.05
  • 1 cup milk $0.38, whole
  • 1 Tbsp vinegar $0.06

Instructions

  1. Freeze the butter for 30-60 minutes before you begin the recipe to make it extra cold and more solid for grating.
  2. Preheat the oven to 425ºF. In a large bow, combine the flour, baking powder, baking soda, and salt. Stir until well combined.
  3. Use a cheese grater to grate the butter into the bowl with the flour. Once grated, use your hands to work the butter into the flour until it resembles cornmeal.
  4. Stir the vinegar into the milk. Pour the milk into the bowl with the butter and flour mixture, then stir until a dough forms.
  5. Place the dough on a lightly floured surface, then press it into a large rectangle. Fold the dough in on itself in thirds, like folding a letter. Then press it into a rectangle once again, about ½ to ¾-inch thick.
  6. Use a biscuit cutter or a drinking glass (about 3-inches in diameter) to cut biscuits out of the dough. Gather up the scraps, press them down again, and cut a few more biscuits until all of the dough is used up.
  7. Place the biscuits on a parchment lined baking sheet. For extra brown tops, brush a little milk on top.
  8. Bake the biscuits in the fully preheated 425ºF oven for 15-17 minutes, or until golden brown on top. Enjoy warm.

Notes

  • Use any mild vinegar such as apple cider, rice, or white vinegar; lemon juice is an effective substitute for vinegar in milk.
