Homemade Biscuits and Gravy pairs flaky, buttery biscuits with a rich sausage gravy made from ground breakfast sausage, flour, and creamy half-and-half. The biscuits are golden topped with melted butter, while the gravy is thickened and seasoned with black and red pepper flakes, offering a hearty breakfast or brunch classic. The gravy is ladled generously over split biscuits for a warm, comforting meal.

Description

This recipe starts with homemade biscuits made by combining flour, baking powder and soda, sugar, salt, and cold butter with buttermilk. The dough is shaped and baked until golden brown, then brushed with melted butter for a rich finish. These biscuits provide a tender, flaky base.

The sausage gravy is prepared by browning breakfast sausage, then thickening it with a roux of flour and butter cooked with half-and-half. The gravy is seasoned with salt, black pepper, and a touch of red pepper flakes for subtle heat. Cooking the gravy until it thickens creates a creamy, flavorful sauce.

Biscuits are split and topped with the warm sausage gravy immediately before serving. This combination offers a hearty, warming dish ideal for breakfast or brunch. The balance of flaky biscuits and savory, creamy sausage gravy provides satisfying textures and flavors.

Ingredients

Homemade Biscuits:

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup butter preferably frozen, cold
  • 1 cup buttermilk
  • 4 Tablespoons butter to brush on the top, melted

Sausage Gravy:

  • 1 lb. breakfast sausage
  • 2 Tablespoons flour
  • 2 1/2 to 2 3/4 cups half-and-half may use whole milk but it will be thinner
  • 1 Tablespoon butter
  • 1/4 teaspoon salt (or more to taste)
  • 1 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 450 degrees. In a large bowl, stir together flour, baking powder, baking soda, salt, and sugar. Grate butter, if frozen, or chop into very small pieces and add to the bowl. Stir in the buttermilk. Stir well until combined. May want to use clean hands to really incorporate the ingredients.
  2. Scoop biscuit dough and drop onto the prepared parchment paper lined baking sheet or 9 x 9 pan. Shape and smooth out biscuit dough with hands. Repeat. Bake 11-13 minutes, or until tops are golden brown. Brush the biscuit tops with 4 Tablespoons of melted butter.

Sausage Gravy:

  1. In a large saucepan, brown sausage over medium heat. Cook until fully cooked through. Use a paper towel to blot out the grease from the pan.
  2. Add flour, butter, and half-n-half. Continue to cook on medium-low for 4-5 minutes, or until thickened. Add salt, pepper, and red pepper flakes.
  3. Cut biscuits in half and ladle the sausage gravy. Serve immediately.
