Homemade Biscuits Recipe
Description
The Homemade Biscuits Recipe relies on a classic biscuit dough made by sifting together flour, baking powder, sugar, salt, and cream of tartar, then cutting in chilled butter to form a coarse, oatmeal-like texture. Buttermilk is added last to gently bring the dough together, minimizing warm hands contact to keep the butter cold for flaky layers.
Rolled out to about ¾ inch thickness, the dough is cut into 2-inch rounds and baked at a high temperature for a short time until golden. A brush of melted butter immediately after baking enhances the flavor and tenderness. The resulting biscuits have a soft, moist crumb with a lightly crisp outside.
These biscuits work well served warm for breakfast, alongside soups or stews, or with preserves and butter. Storing and freezing methods allow making batches ahead for convenience without losing texture.
You can grate chilled butter to cut it into the dry ingredients more evenly, facilitating better layering. After cutting biscuits, freeze them solid on a parchment-lined tray before storing to maintain shape and texture during freezing.
Ingredients
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 2 teaspoons sugar
- ½ teaspoon salt
- ½ teaspoon cream of tartar
- ½ cup unsalted butter chilled, plus melted butter for brushing
- ¾ cup buttermilk
Instructions
- Preheat the oven to 450 degrees F.
- Sift flour, baking powder, sugar, salt, and cream of tartar together into a large bowl.
- Cut in cold butter until the mixture is the consistency of coarse oatmeal.
- Make a well in the center of the mixture and pour in buttermilk. Stir with a wooden spoon until dough begins to come together. Press dough together, but use your hands as little as possible, since it will warm up the butter in the dough.
- On a lightly floured surface, roll out dough to about ¾ inch thick. Use a cookie cutter to cut 2-inch round biscuits, then place on an ungreased baking sheet.
- Bake for 10 minutes, or until golden brown. Brush with melted butter as soon as biscuits come out of the oven. Serve warm.
Notes
- Bake biscuits at 450°F for about 10 minutes until golden brown and brush with melted butter when hot.
- For freezing, cut biscuits and place on a parchment-lined baking sheet; freeze solid, then store in resealable bags for up to 3 months.
- Thaw frozen biscuits at room temperature before baking and bake for about 10 minutes.
- Grate cold butter to cut into flour for better texture and quicker mixing.
- Limit handling dough to keep butter cold for flakier biscuits.
