Description
Homemade Bread Crumbs can be made from nearly any kind of bread by first cutting it into cubes and processing it into fine crumbs using a food processor or blender. Fresh bread crumbs have a soft texture suitable for binding or mixing into recipes. To make dried bread crumbs, the fresh crumbs are spread out on a baking sheet and baked at a low temperature until thoroughly dry and crisp, ideal for coating or adding crunchy texture to dishes.
This flexibility allows use of leftover bread, including artisan varieties, sandwich bread, or rolls. Sweet breads and seeded breads may affect the crumbs' taste and texture. Storing fresh crumbs in airtight containers in the refrigerator or freezer preserves their freshness, while dried crumbs can be kept longer in the pantry. Alternative methods for making crumbs without a food processor include crushing bread in bags with a rolling pin or grating dry bread.

Instructions
To make fresh bread crumbs
- Place the cubed bread in your food processor and pulse until fine crumbs form. You now have fresh bread crumbs!
To make dry bread crumbs
- Spread the fresh bread crumbs on a baking sheet (lined with parchment paper for easy clean up, if you prefer). Bake at 250 degrees F for 15-20 minutes, stirring around every 5 minutes or so, until bread crumbs are dried out. (Depending on how stale the bread is and what kind, it could take up to 30 minutes or so for them to dry out.)
Notes
- Yield is about half the volume; 4 cups cubed bread makes roughly 2 cups crumbs.
- Use leftover artisan, sandwich, rolls, or gluten-free breads; avoid sweet breads if you want neutral crumbs.
- Fresh crumbs keep refrigerated for about a week or frozen up to 4 months.
- Dried crumbs store in airtight pantry containers for 2-3 weeks or freeze for 4 months.
- If no food processor, use a blender, rolling pin in a bag, or grater for making crumbs.
