Instructions

To make fresh bread crumbs

  1. Place the cubed bread in your food processor and pulse until fine crumbs form. You now have fresh bread crumbs!

To make dry bread crumbs

  1. Spread the fresh bread crumbs on a baking sheet (lined with parchment paper for easy clean up, if you prefer). Bake at 250 degrees F for 15-20 minutes, stirring around every 5 minutes or so, until bread crumbs are dried out. (Depending on how stale the bread is and what kind, it could take up to 30 minutes or so for them to dry out.)

Notes

  • Yield is about half the volume; 4 cups cubed bread makes roughly 2 cups crumbs.
  • Use leftover artisan, sandwich, rolls, or gluten-free breads; avoid sweet breads if you want neutral crumbs.
  • Fresh crumbs keep refrigerated for about a week or frozen up to 4 months.
  • Dried crumbs store in airtight pantry containers for 2-3 weeks or freeze for 4 months.
  • If no food processor, use a blender, rolling pin in a bag, or grater for making crumbs.
