Description
This sausage recipe uses ground pork combined with a seasoning mix including salt, black pepper, crushed fennel seeds (optional), ground sage, garlic powder, poultry seasoning, thyme, rosemary, smoked paprika, and optional red pepper flakes. After thoroughly mixing, the meat is chilled for at least two hours to allow flavors to meld and to firm the mixture.
The meat is shaped into half-inch thick patties and cooked in a skillet over medium heat until lightly browned on both sides, producing juicy and flavorful sausages. The seasoning blend creates a balanced flavor profile with herbaceous, slightly smoky, and mildly spicy notes.
The sausages can be customized with sweeter or spicier variants by adding brown sugar or cayenne pepper, respectively. Preparing the spice crushes in advance helps evenly distribute flavors. The recipe also allows swapping some or all pork with ground turkey for variation.
Ingredients
- 1 pound ground pork
Seasoning Mixture
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon fennel seeds crushed, optional
- ½ teaspoon sage ground
- ½ teaspoon garlic powder
- ¼ teaspoon poultry seasoning
- ⅛ teaspoon thyme dried leaves
- ⅛ teaspoon rosemary crushed, dried

Instructions
- Combine pork and all seasonings in a medium bowl. Mix very well.
- Refrigerate at least 2 hours or overnight.
- Divide meat into 6 patties, ½" thick.
To Cook
- Heat a skillet over medium heat.
- Add patties (and a pat of butter if you'd like) and cook 4 minutes per side or until lightly browned.
Notes
- For sweeter sausages, add 1 to 2 teaspoons brown sugar to the meat mixture.
- Add 1/8 teaspoon cayenne pepper or extra chili flakes for a spicier sausage.
- Crush whole spices by placing them in a small sandwich bag and using a rolling pin or meat mallet.
- Ground turkey can replace part or all the ground pork for a leaner alternative.
