Homemade Caesar Salad Dressing
Description
This dressing recipe blends mayonnaise and olive oil into a smooth base, enhanced by freshly squeezed lemon juice and Dijon mustard for acidity and slight pungency. Grated garlic and Worcestershire sauce add depth and umami, while freshly grated Parmesan cheese contributes a nutty, salty flavor and creamy body. Salt and black pepper season the dressing to taste.
Whisking the ingredients until smooth yields a thick but pourable dressing. If it becomes too thick, a small amount of water can be added gradually to adjust the consistency without diluting flavor. This dressing pairs traditionally with romaine and other crisp lettuces to make a Caesar salad but can also work as a dip or sauce for grilled vegetables or chicken.
For vegetarians, choosing Parmesan cheese made without animal rennet ensures dietary suitability. The dressing stores well for several days refrigerated in an airtight container, making it convenient to prepare ahead.
Ingredients
- 1 cup mayonnaise
- ¼ cup extra-virgin olive oil
- 2 tablespoons lemon juice fresh
- 2 teaspoons Dijon mustard
- 1 garlic grated, clove
- 1 teaspoon Worcestershire sauce
- Pinch salt sea salt

Instructions
- In a large liquid measuring cup or medium bowl, whisk together the mayonnaise, olive oil, lemon juice, mustard, garlic, Worcestershire sauce, salt, and several grinds of pepper until smooth.
