Homemade Celery Salt
Description
This recipe uses about 1 cup of loosely packed celery leaves baked at a low temperature until dried and crisp. After cooling, the leaves are ground with a small amount of salt in a spice grinder until fine. The mixture is stored in a covered container for up to six months in a dark pantry or indefinitely in the freezer. This homemade version differs from traditional celery salt made from celery seeds by using leaves, offering a unique flavor and a way to use typically discarded parts.
It can be sprinkled on salads, vegetables, or meats to add a fresh celery note with controlled saltiness.
Ingredients
- 1 cup celery leaves loosely-packed
- 1/8 teaspoon salt
Instructions
- Preheat oven to 200 degrees. Line baking sheet with parchment paper.
- Arrange celery leaves in single layer on prepared baking sheet. Bake 20 minutes, rotating pan halfway through baking time.
- Remove from oven and cool slightly. Transfer to spice grinder. Add salt and process until finely ground. Cool completely and store covered in pantry.
Notes
- Yield varies with celery bunch size; about 1 cup of loosely-packed leaves yields 2 tablespoons of celery salt.
- Store in an airtight container in a dark place up to 6 months or freeze indefinitely.
- This uses celery leaves instead of seeds for a fresher flavor and less waste.
