Homemade Cheez-Its
Description
This recipe starts by pulsing shredded extra-sharp cheddar cheese with all-purpose flour and salt in a food processor until finely ground. Cold diced butter is incorporated to produce a crumbly mixture, then ice water is added to bring the dough together gently. This dough is briefly kneaded, divided, and refrigerated to firm up, which improves rolling and shaping consistency.
After chilling, the dough is rolled on floured parchment to about a 9x11-inch rectangle and cut into 1-inch squares. Each square is pricked with a hole to replicate the distinctive Cheez-It look and to promote even baking. The squares are spaced evenly on baking sheets.
Baking for 12 to 15 minutes at 350°F results in sharply flavored, golden crackers with a crunchy texture. The cheese provides rich, tangy notes balanced by salt and the buttery dough. These snacks can be served as finger foods, party snacks, or with soups and salads for added crunch.
