Homemade Chicken Apple Sausage
Description
This recipe blends ground chicken with finely diced Granny Smith apple and onion, fresh minced sage, salt, and black pepper. The ingredients are combined thoroughly to distribute the small apple and onion pieces evenly throughout the meat. The mixture is formed into roughly 1-inch patties, chilled briefly, then browned in olive oil over medium heat.
After searing on both sides, the sausages cook covered at lower heat to ensure they are done inside, reaching an internal temperature of 165°F. The result is a tender and moist sausage with subtle sweetness and herbaceous undertones from the apple and sage, respectively.
These sausages can be served as a breakfast or dinner item, paired with sides like eggs, potatoes, or vegetables. They offer a fresh, homemade flavor and texture distinct from processed sausages.
Ingredients
- 1 pound ground chicken
- 1 apple or other tart, firm variety very finely diced, Granny Smith
- 1/2 onion very finely diced, medium
- 1/4 cup sage finely minced, fresh
- 1 tsp salt
- 1 tsp black pepper freshly cracked
- olive oil for frying
Instructions
- Put the ground chicken into the bowl of a stand mixer, breaking it apart as you add it. You can also do all this by hand in a large mixing bowl.
- Add the rest of the ingredients EXCEPT the olive oil, and mix until everything is well combined, and the little chunks of apple and onion are evenly distributed.
- Form the meat mixture into small 1 inch balls. I use a 1 inch scoop to portion out the meat and then roll it in my hands. Place all the balls on a baking sheet and put in the refrigerator until you are ready to cook them.
- Heat 2 tablespoons of olive oil in a large skillet and brown the sausage patties for 2 minutes on each side. Then lower the heat, cover the pan, and cook for another 7-10 minutes, or until the meat is cooked through. The internal temperature of the sausage should be 165°F.
