This soup starts with sautéing carrots, celery, and garlic in butter to develop mild sweetness and aromatic depth. Broths are added along with cooked, seasoned, chopped chicken breast and dried herbs such as basil and oregano, enhancing the savory base. The mixture is brought to a boil, then simmered to allow flavors to meld. Egg noodles are cooked in the broth until tender but not mushy.

Ingredients
- 1 tablespoon butter unsalted
- 1 cup carrot thinly sliced
- ½ cup celery chopped
- 1 tablespoon garlic minced
- 4 (14.5-ounce) cans chicken broth full-sodium
- 1 (14.5-ounce) can vegetable broth
- 2 chicken breast seasoned to taste, cooked and chopped
- 1 teaspoon basil dried
- ½ teaspoon oregano dried
- salt to taste
- black pepper to taste
- 1½ cups egg noodles medium size
Instructions
- Melt butter in a large pot over medium heat. Add carrots and celery and cook, stirring, until just tender, about 5 minutes. Add garlic and cook for 1 minute more.
- Add broths, chopped chicken, basil, oregano, salt, and pepper to taste and bring to a boil.
- Reduce heat to a simmer, add egg noodles, and simmer for 20 minutes. Serve warm.
Notes
- For slow cooker preparation, combine all ingredients except noodles and cook on low for 6–7 hours or high for 2–3 hours; add noodles and cook until tender.
