Description

Ripe avocados are roughly mashed by fork to maintain texture, then fresh cherry tomatoes and chopped coriander are gently folded in with salt and pepper seasoning. Ingredients
- ½ red onion diced finely
- lime juice of 1
- 1 clove garlic crushed or grated
- ½ - 1 chilli seeds removed and diced very finely (optional)
- 2 avocado skins and stones removed
- 6 cherry tomato diced
- 10 g Coriander chopped finely, aka cilantro
- salt to taste
- black pepper to taste
Instructions
- Place the diced red onion and lime juice in a bowl and stir. Leave for 1 minute (this will take the harsh edge of the onions).
- Add the garlic (and chilli, if using) and stir again.
- Add the avocados to the bowl and mash roughly using a fork.
- Add the cherry tomatoes, most of the coriander (cilantro), plus some salt and pepper and stir everything together, taking care not to stir too much or your guacamole will lose its chunkiness.
- Taste the guacamole and if necessary add extra lime juice/salt/pepper/chilli to your liking.
- Serve topped with the remaining coriander (cilantro).
Notes
- Leaving the red onion in lime juice briefly reduces its sharpness for better balance in the guacamole.
- Adjust chili quantity or omit it to suit preferred spice level.
- Use ripe avocados for optimal creaminess and flavor.
- Serve soon after preparation to maintain bright color and texture.
